Yanbian Water Tofu: The Taste of Home
yán biān延边yǒu有yī zhǒng一种tè bié特别de的shuǐ dòu fǔ水豆腐 ,jiào zuò叫做 “ tsodibi ” 。
In Yanbian, there is a special kind of water tofu called 'tsodibi'.
lǐ nǚ shì李女士shì是yī一wèi位cháo xiǎn zú朝鲜族fù nǚ妇女 ,tā她hé和jiā rén家人cháng cháng常常yì qǐ一起zuò做zhè zhǒng这种dòu fǔ豆腐 。
Ms. Li is a Korean ethnic woman who often makes this tofu with her family.
zuò做shuǐ dòu fǔ水豆腐yào要xiān先bǎ把huáng dòu黄豆pào泡yī yè一夜 ,rán hòu然后bǎ把tā men它们mó磨chéng成dòu jiāng豆浆 。
To make water tofu, you first soak soybeans overnight, then grind them into soy milk.
dòu jiāng豆浆yào要guò lǜ过滤liǎng两cì次 ,zhè yàng这样wèi dào味道cái才huì会gèng更hǎo好 。
The soy milk needs to be filtered twice to improve the taste.
jiē zhe接着 ,bǎ把dòu jiāng豆浆jiā rè加热 ,děng dào等到shàng miàn上面yǒu有pào mò泡沫shí时 ,jiā加yì diǎn一点níng gù jì凝固剂 ,màn màn慢慢jiǎo bàn搅拌 ,dòu fǔ豆腐jiù就huì会biàn chéng变成bái sè白色de的kuài块 。
Next, heat the soy milk, and when foam appears on top, add a little coagulant and stir slowly; the tofu will turn into white blocks.
zuì hòu最后 ,bǎ把dòu fǔ豆腐fàng jìn放进bù dài布袋lǐ里yā压yī yā一压 ,jiù就zuò做hǎo好le了 。
Finally, put the tofu into a cloth bag and press it, and it's done.
chī吃de的shí hòu时候 ,kě yǐ可以jiā shàng加上jiàng yóu酱油 、yáng cōng洋葱hé和là jiāo辣椒zuò做de的jiàng酱 。
When eating, you can add a sauce made of soy sauce, onions, and chili.
lǐ nǚ shì李女士shuō说 ,zì jǐ自己zuò做de的shuǐ dòu fǔ水豆腐hěn很nèn嫩 ,hěn很xiāng香 ,bǐ比mǎi买de的hǎo chī好吃 。
Ms. Li says that homemade water tofu is very tender and fragrant, and tastes better than store-bought.
měi dāng每当jiā rén家人tuán jù团聚shí时 ,tā men他们dōu都huì会yì qǐ一起zuò做shuǐ dòu fǔ水豆腐 ,zhè这ràng让dà jiā大家jué de觉得hěn很wēn nuǎn温暖 ,yě也ràng让jiā rén家人gèng更qīn jìn亲近 。
Whenever the family gathers, they make water tofu together, which makes everyone feel warm and brings the family closer.
